What You’ll Be Doing
- Leading the night production of viennoiserie including croissants, pain au chocolat, and seasonal specials
- Executing advanced lamination, proofing, and baking techniques with precision and consistency
- Collaborating on recipe development and seasonal innovation with the Head Baker and wider team
- Managing mise en place, production schedules, and smooth shift handovers
- Upholding the highest standards of food safety, hygiene, and kitchen organisation
- Working independently while contributing to a respectful, supportive kitchen culture
What We’re Looking For
- 4–5 years’ experience in high-end pastry or artisan baking kitchens
- In-depth knowledge of fermentation, lamination, dough development, and baking science
- A proactive, reliable team player who can take initiative and lead by example
- Passion for quality, precision, and continuous improvement
- Full right to work in the UK and ability to commute to Stratford for overnight shifts
